History: The rose, the oldest wine
26 centuries ago, Marseille was found by the ancient Greeks who came along with grapes seeds, and they established the early vineyards and wine culture in Provence. The wines produced at that time were light in colour. In Provence, the climate, the soil, the grape varieties are conducive to the production of the elegant pink colour. Provence is also the only wine region to dedicate its production to Rosé wine. Its knowledge and anticipation today of Provence Rosé allows it to be world No. 1 Rosé wine production.

WINE WORKSHOP: DEVELOPMENT OF ROSE
When the harvest of black grapes arrive at the winery, we proceed to stalking, separating the berries (grapes) of the cob (woody part of the cluster). The berries are then dislodged. They burst and release the pulp, skin, seeds and grape juice. This set is called the wort. The wort is then macerated in a tank between 2 and 20 hours at a controlled temperature ranging from 16 ° C to 20 ° C. The pigments and fragrances contained in grape film mix with the rest. It must then be pressed to separate the solid part of the marc (skin, seed) of juice that is only fermented at low temperature (18-20 ° C) to preserve maximum aromas. Unlike red wine, it is this short maceration which colours and aromas in rose wine. Another technique, called direct pressing is to directly press the whole or scuffed clusters and to immediately clear juice to ferment.

Rosé wine goes perfectly with the original Provencal cuisine throughout the year.

CANCELLATION IN HIGH SEASONS
Regardless of the cancellation fees set out in our terms and conditions, some providers and hotels may apply different rules in high seasons. These terms of payment and cancellation will be specified in each reservation. You will be informed right after your booking. It happens that the hotels require the total booking value in case of cancellation.
